I was planning a party on the boat and wanted to make a special dessert for family and friends. I made everything ahead of time so all I had to do was put the pound cake kabobs together and put them on the grill. If you like pound cake, if you like bananas, this is like a banana split without the ice cream. Everyone will love them!
Serves: 6
Prep Time: 20 minutes, depends on cake
Grill Time: About 2 minutes
Chocolate Ganache ,warmed (See Chocolate Ganache recipe)
6 skewers, if skewers are wood, soak in water so they do not burn on the grill
6 slices of pound cake, homemade or store bought, each 1-inch thick, cut into 1-inch cubes (See Classically Simple Pound Cake recipe)
3 bananas, peeled and cut into 1-inch lengths
4 tablespoons unsalted butter, melted (for brushing on kabobs)
whipped cream (optional)
Preheat the grill.
- Thread the cake and banana pieces alternately onto 6 skewers, dividing them evenly. Brush with butter, place on the grill rack, and grill. Turn on each side until the cake is lightly toasted, about 2 minutes total.
- Gently rewarm the chocolate ganache over low heat. Pour a pool of ganache onto 6 individual plates, dividing evenly. Add a dollop of whipped cream if desired.
- Place a skewer on each plate, drizzle with some of the warmed ganache and serve hot.
