Easter brunch is always a little bit tricky. Attending a morning service and having a worthy breakfast spread ready to go right when you get home, is nearly impossible. Well, maybe if you’re the Easter Bunny. Assuming you are not the Easter Bunny, and that you don’t want to miss out on the egg hunts and basket openings, we’ve put together a few of our favorite make-ahead brunch items to ensure your ability to be out of the kitchen and in on the fun.
Our Bacon and Gruyere Quiche is easy to make ahead of time and can be served at room temperature. If Gruyere is a little high brow for your kids, you can easily replace it with another cheese. The crust on this quiche is so sturdy, your guests can eat it like a slice of pizza. Cut into thinner slices, it can be finger food if you are having a buffet style brunch instead of a sit-down meal.
Blueberry Muffins are always a hit, especially when they have a decadent crumbly top. The kids can have a muffin in one hand and a chocolate bunny in the other – at least one of them has fruit.
To round out your spread, add a simple green salad or fresh fruit salad, some fresh juice, hot coffee and you are ready to brunch. Take a deep breath and enjoy the morning, because this year you’re not stuck in the kitchen flipping pancakes.
