Grandma Harriet’s Quick Brownies

Grandma Harriet’s Quick Brownies is one of the many treats she would make for us whenever we visited. We loved these so much! They are so delicious and so simple and quick to make. I love that they only bake for 15-20 minutes, and you put the frosting on them as soon as they come out of the oven. Don’t worry if the frosting cracks, it always does. Grandma would have been a 100 years old on May 14, 2017. Cherish your time with your family, you will miss them so.


Serves: 6, depending on how you big you cut them
Prep Time: 10 minutes
Cook Time: 15 – 20 minutes


Brownies:
½ cup salted butter, melted
2 eggs (beaten)
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 cup of flour
½ cup nuts, chopped (optional)
1 teaspoon vanilla

Frosting:
2 tablespoons butter
2 tablespoons cocoa
1 ½ Cups powdered sugar
2 tablespoons half and half
1 teaspoon vanilla


Preheat the oven to 350° F. Lightly spray or butter a 9×13 pan.

  1. In a large bowl, mix together the butter, eggs, and sugar. Set aside.
  2. In another bowl, sift the flour and cocoa powder. Add the dry ingredients to the wet and
    combine. Add the nuts and vanilla and stir until combined. Do not over mix.
  3. Spoon into prepared pan and spread evenly, it will be a thick batter.
  4. Bake for 15-20 minutes depending on the color of your pan. Bake 15 minutes for dark pan and 20 minutes for light colored pan.
  5. Mix the frosting together while brownies are still in the oven and spread the frosting on the brownies as soon as you take them out of the oven. Let them cool completely before cutting.

Note:  The frosting will crack when you cut them. Don’t worry, this is normal.
