I have tried other orange cookie recipes, my mistake! This is Mom’s Orange Cookies recipe. They are a really soft, light cookie with just the right amount of orange flavor. The ingredients for this recipe are written exactly the way Mom gave it to me, I love that part. Did I tell you they are easy and delicious?
Makes: 72 cookies (6 dozen)
Prep Time: 15 minutes
Bake Time: 14-15 minutes
Preheat oven to 350° F. Put oven racks in middle and upper part of oven.
Cookies:
2 cups granulated sugar
1 cup shortening (I used a Crisco stick)
2 eggs
1 ¼ cups buttermilk
5 level cups all purpose flour
1 heaping teaspoon baking soda
½ teaspoon salt
1 orange, juice and rind (zest)
Frosting or Glaze:
1 orange, juice and rind (zest)
1 tablespoon salted butter, at room temperature
3 ½ cups Confectioner’s sugar (powdered sugar) for a glaze to dip cookie in, add in ½ cup increments to stiffen to make a thicker, spreadable frosting.
- In a large bowl, sift together, flour, baking soda and salt. Set aside.
- In a standup mixer with the paddle attachment, add the sugar and the shortening, mix well. About 1-2 minutes on medium speed.
- Add eggs, one at a time. Add the buttermilk, orange juice and orange zest. Mix.
- Turn off the mixer, add the dry ingredients, mix, but do not over mix. It will be a light, wet dough.
- Drop onto an ungreased sheet pan. I used a small scoop, you can also use a spoon.
- Bake for about 14 minutes until light golden brown. I did 7 minutes on middle rack and 7 minutes on upper rack. Let cool on pan for 5-7 minutes before removing to cooling rack.
- Cool completely. Dip in glaze or frost each cookie.
NOTE: To dip the cookies in the glaze, I put a cooling rack on a piece of parchment paper with a sheet pan underneath it, dipped the cookie in the glaze and let it set on the cooling rack.
